You want to grind one dose at a time, weigh it, and taste the difference between two coffees without wasting either one. That is what the Philos is built for. Beans go in, the same beans come out, and there is almost nothing left in the chamber to muddy the next cup.
The 64mm flat burrs sit vertically, fed by a long auger that keeps popcorning under control and pushes grounds straight out the chute. The adjustment ring is at the back, so you can pull the front plate off its magnets, unscrew the burr carrier by hand, clean the chamber, and put it all back with your grind setting exactly where you left it. Stepped mode moves in increments as small as 6 microns and covers espresso through batch brew on one dial. You can convert it to stepless using the procedure in the manual. Choose your burr set when you order: I200D for clarity, bright acidity and fruit, or I189D for body, sweetness and traditional Italian espresso.
Mazzer builds this one for the home and for light commercial work, and rates it at up to 2 kg of ground coffee a day. It earns its place as a single dose grinder in a specialty bar, a coffee lab or a serious home setup. It is not the grinder to put on a busy bar as the only espresso grinder, and it holds 60 g at a time, so if you want a hopper you keep full all day, the Mazzer Mini or the Super Jolly V Up Electronic is the better buy.
